We have two steamer .

1 Your fill valve may be stuck open.
2 The water level control board or probes may be defective.
3 The unit is full of lime scale and interfering with the water level controls.

We purchased a used Vulcan Steamer model # VSX10GC

Please be careful when converting appliances form natural gas to propane. Depending on the equipment there are several changes that need to be made. You will at least have to change burner orifices and convert or replace the gas valve. Some gas valves are not convertible. What many people over look are changing the pilot orifice and on some appliances like braising pans, griddles and char broilers there is a runner tube orifice. The gas valve also needs to be adjusted to the proper manifold pressure and pilot adjustments will be required. I recommend on Vulcan equipment that you contact Hobart Service since they are factory trained on all Vulcan cooking equipment.

Vulcan fryer pilot knob won't turn or push in. Double unit and neither one moves

My Vulcan fryers heat up without problems. Once I cook product in it, it does not recover very fast at all. It will drop from 350 to 250 then it takes about 10 minutes to cook fries in it.

forgive my answer but you need to look at the situation by standing back a bit. You have heated the fryer up, but then you load it with product that is not at 350 degrees and the fryer must now take that 10 minutes to pull it's temp + product back up to temperature. That is as if I am understanding your question

Vulcan double deep Fryer with built-in filter system model 2GR45AF the pilot light is lit, but the burner don't fire and heat the shortening

HI. Its Bob To fire up, you need 3 things, Air ( with oxy) fuel and source. First step, is to make shure, you have gas. Without this, you will never get no were. Second , you must purge the system to get air out of the gas line. this is done by trying to light up the system , 4 to 8 times, here the click is the valve opening and closing.... this will clear the system out of air and get the gas to the burder. this will take time, 4 to 8 tries... if you smell for any reason gas, stop, shut off the gas... This smells like rothen eggs... Gas is heavier then air, so it flows down to the lowest level. there is also sensors ,switchs on this... Read the instruction on how to purge or turn on the gas... some have to push down hold for 5 secs, then turn.. Please work safe/ bob

I have a vulcan deep frezer 300l that i need a thermostat for. Any ideas to where can source parts. She an 20+ old faithful girl not ready to part with her yet and cant keep running on fast freeze.

vulcan-chef is part of the email/ electrolux group of companies (hoover, simpson,westinghouse, AEG, dishlex etc)so try the service spares for email or electrolux thermostats are fairy generic for the older units so ask the spares department for a suitable replacement ask any appliance repair shop if they could point you to a supplier

Faulty switch or heating element replace the faulty part if possible or replace the fryer.

My vulcan lg 300 deep fryer latch won't turn what should I do

Some fryer valves have a safety lock, usually a slide on the handle near the valve body that must be released to open the valve. Check for this first. It's very rare for a fryer valve to stick unless it was forced shut with something partially blocking it. If not, let the fryer cool completely. Dip as much oil out as possible. Then disconnect the gas line and, with help, turn the fryer upside down draining the remaining oil into a suitable container. At this point, you have little to lose. Take a large wrench or piece of pipe to get more leverage and try to force it open and free it up. Do not use so much force that you damage the kettle. If you get it free, check to see that it does not leak before putting oil back in the fryer. If it leaks or fails to come free, replace the valve.

If wires are crossed will burner work

It depends on which wires are crossed. Switching the wires on a two wire high limit, thermostat, or thermopile will not matter. The wiring on the gas valve must be correct for the fryer to work properly and safely.
