How do you make sweet potato dumplings?
Spray a 13x9x2 inch baking dish or pan. Take one can of biscuits and peel each one in half, (you'll have 16 pieces). I have used crescent roll dough, but biscuits are easier. Press biscuit pieces to flatten them and place sweet potato to one side of the biscuit. I use frozen sweet potato patties but, you can use canned sweet potatoes (mash them good) for this recipe. Cut the patties in half or use 1 heaping tablespoon of mashed sweet potato and put the sweet potato to one side of the biscuit. Sprinkle with your spices of choice ( pumpkin pie spice,apple pie spice or even just cinnamon). Bring the one side of the biscuit over the other side and press the edges together to seal it really good. Line your dumplings in two rows in your baking dish, sprinkle with your spices of choice. Now, in a saucepan combine 2 cups of water,2 cups of sugar,1 1/2 sticks of butter (or margarine), 1 tablespoon of corn starch, 1 teaspoon of vanilla. Whisk together and put on a medium-high heat until just boiling-- all the time whisking ( to prevent lumps). Soon as it boils pour it over the dumplings. Bake at 350 degrees for 45 minutes. When you pull it form the oven sprinkle with cinnamon and serve. If there is any left-over (HAHA!) It reheats well and is still SO_O_O_O fantastic!

How do I freeze cream cheese?
It isn't something I have done before but I have frozen cheese a few times. The taste isn't much affected but the consistency is altered somewhat so a firm cheese turns into a crumbly cheese.
Yoghourt freezes quite well and can make an excellent ice cream substitute so I expect cream cheese will be similar.
I suggest the cream cheese is divided into portions and placed into individual food bags or containers and then placed in the freezer.
