The control panel for your oven is starting to go bad and is starting to not work anymore. You should call a repair person to take a look at it.

But it is up to you, it helps the companies sell spares and keeps service techs in a job. It least it not a Gaggenau or a Miele where parts cost $2,000 to $5,200!! Ovens stuck in self-clean mode Door Locks broken and locked so you can't get in. Burned out elements. Burned out fans. Burned control boards. The hinges would have to be pried out of the slots and clamped in the open position to allow the door to be reinstalled. Door removal is never recommended maintenance.

There's probably a short that makes the range think that the probe is connected. It could be the probe socket or the control board. Check the socket first since it can be damaged more often. See the parts diagram here: https://www.geapplianceparts.com/store/parts/ModelSectionParts/JGS968SH6SS/4/0/0/0/BODY_PARTS . The socket is part 594. It's reached by removing the side panel. Your oven has locked the door to perform a self-cleaning cycle.

Self cleaning programs break things 80% of the time. You should never ever use that cycle. 650'F is too brutal to elements, fans, latches and circuit boards that are above the oven. I have never known one with a manual latch. You need a new stove or a GE Technician service call. Try and light oven manualy first if it does not light check to see if gas has been turned off to oven mistake Check if fitted timer is on manuel or pilot is blocked and needs cleaning

Using the Self Cleaning always breaks ovens. We see it here all the time. It superheats the oven to 700' and overheats electronics, breaks door switches/locks and burns out elements and fans. It could also be sensor related.You need a service call from someone who has experience with that model. Control boards and touchscreens are expensive to replace on a hunch.

Possibly a faulty switch contact.
