Do all Hobart dishwashers have a element in them
All Hobart dishwashers will have a wash tank heating element, but the rinse water is not heated by the dishwasher, unless it has a built-in booster heater. Usually a separate booster heater is used to heat rinse water to 180-190 deg. F for hot water sanitation.
How do i convert automatic to manual operation on
It is possible and difficult unless you have enough patience and time.
Requires little electrical wiring knowledge.
You have to understand the machine logic. Note down the sequences. Remove the wires, one by one, and keep notes on every wire and associated parts to which it is connected.
Now group them. Arrange and fix external switches in wooden box. Connect them one by one. Mark the switches like wash, drain etc depending on the device you connect.
Try! you will succeed. It is a challenging job.
Be careful while you are handling electricity.
Can I change the 3 phase to a single phase?
Not practical. You would have to change the pump motor to single phase, you'd have to chage the heating element most likely depending on what size is in it now. Also does it require an auxiliary water heater? it's probably 3 phase also. Changing phases is not like changing voltages.

is really very easy, remove the two screws and use them to push it out screw them in the two holes whit treads and thats it. (sorry my english, i´m from mexico)

3 Con, is the booster heat contactor. If it is chattering, the fault will be in the booster. There are a few different boosters in the AM14. can you post the ML number from the data plate, or describe if the booster is a square Hatco HCM-10, or a round stainless booster with a 13 kw multi wired element.. All boosters use a low water cut off circuit, a high limit thermostat and a control thermostat. The old Hatcobooster uses mechanicqal components, where the new rount tank uses probes and a control board. The board has 3 leds. red is calling for heat, yellow is open thermistor, and green is shorted thermistor.
AM14's had a variety of different control circuit voltages, ranging from 240/208/120 and 24 volt AC. Check the transformer secondary for correct output to controls, trace through circuit until voltage pulses. If new style, it could be just scaled up probes not reading water. Drain the tank with the power off before removing probes.
Hobart dishwasher leaking as it rinses/fills
If the brand is Watts, a rebuild kit is available from Hobart. Their part # 118270. It should contain the float with a red rubber gasket and a bonnet o-ring. Unscrew the cap, clean off the sealing surface and drop in the new float OR you might find a local Watts distributor and see if they carry the kit. That should solve the leaking issue. Let me know.
Uaable to reach the correct tempature
Your rinse Thermister is shot. Replace the thermister between the fill valve and the solenoid. Also be watchful of the 120V, ensure this is secured as there is two power sources. Is ya good
Operation of digital temperature indicator
When the unit is idle and in a wash cycle the wash temp is displayed.If you look inside the tank you will see a white float and a metal probe which is the themometer for the wash tank temp.The rinse temp will only be shown when the display reads (Rinse) and theres a thermistor that screws into the water line near the solenoid valve that measures the temp.
Hobart AM-14 dishwasher is constantly filling with water.

It is a professional machine, you have it serviced professionally by your local Hobart Service Centre and claim the repair against your expenses. The machines are way beyond the capabilities of someone that can just buy parts online.
It is either incorrectly wired or the control board or relays are are failing / failed.

What is wrong with Hobart dish machine says check water level
1.Loss of water pressure due to pump obstruction. Check for any obstruction at the pump intake.
2.Strainers clogged causing inadequate water supply to pump.
3.something may be inhibiting free movement of the low water float; remove any foreign object from around the low water float or its magnet.
