The suspect is probably gas supply, gas valve, or gas related part inside tankless unit.

When the temp. dropped below zero outside the cold

You can look into an electric flue damper. It must be tied into the heater controls so the fail-safe is that the heater will not operate unless it senses that the flue is open.

I have a bosch aq125

That is a residential unit and at maximum will raise water temp 90 deg at 2 gallons per min.. You need at least one commercial unit with a thermostat that will allow high enough water temp. to pass health dept. requirements, and a self heating dishwasher at a minimum.
