I have a 2000 Triumph Thunderbird with low miles. The last time I ran it was in Jan 2010. I turned fuel switch to on and fuel started running out. I turned off and stream stopped. I turned it on again the fuel is not running out? I looked at the hose and it looks like there are no defects? Should I attempt to start once the fuel has evaporated?

I assume that this bike is carburetted. Most likely the float needle in the carburetor, (or carburetors if equipped with more than one carb), stuck when you first turned on the gas. If the gas has stopped flowing when you open the petcock, you should be OK to start it. If the problem persists, you will probably have to pull down and clean out the carb(s). Pay special attention to the needle and seat. Make sure the needle has no corrosion present, You can use Scotch-bright to clean needle and seat.

Starts and runs perfect, but occassionaly will

sounds like a fuel problem, maybe blocking fuel tap pickup in the tank, they often have filters on the ends inside the tank, If it has a vacumn opperated fuel tap, they can sometimes stick shut, if so try turning it to PRI between on and reserve, next time it happens.
Its not likely to be anything electrical if it starts again so quickly

Leaking fuel from carberator overboard drain

the float is stuck in the open position, this is common after sitting for a period of time. You will have to remove the carb and clean it out.

Just got my 1995 triumph running great at low RPM but when you hit the throttle is bogs way down and stalls. Do the carbs need to be sunk? It seems like the timing is off.

mixture definately its either pulling to much fuel in or not enough fuel when reved also could as well be the float height as the fuel isnt there quick enough to rev up 1st try the mixture by on the carbs there will be a mixture screw turns this in and unscrew it 2 1/2 turns out and try this if still no difference fidle with it until you feel its getting better or if this doesnt help get back to me and i will tell you the float also change the plugs may make a difference buddy

Long time for carbs to get gunked up if not put away with empty tank or special additives. Also clean splark plugs and load test battery. If battery more than 4 years old replace it.
