This volume of oil is shown in the service manual, on one of its specifications pages. If you are going to work on your cycle, you need to get a service manual.

For a bike of this age, there should be a free download of the manual. Find it by googling "service manual download Suzuki 1995 GSX-R 1100w."

Following this advice, I found this link to a free download;
http://servicemanualsgsxr.com/suzuki-gsx-r-1100-1993-1996-service-manual/. After downloading the manual I found the fork oil capacity on page 1-11, 425 ml.

However, I think you will want to know how to get the oil in and out of the forks as well. This info is found on pages 7-22 to 7-29.

My repair manual and local shop specify 15-16 oz per tube. weight can be changed to suit your ride quiality preferences.

level of fork oil is more important than the amount...it should be 120mm from the fork top when fully compressed without the springs.
But if you want an amount then you're looking at 470cc although this will depend on wether the fork internals were stripped and dry before refilling. That's why using level is a better guide.

Engine oil for the 11 is 10w40

Remove front wheel, brake calliper etc . Undo top and bottom yoke pinch bolts and slide out fork leg. Clamp chrome tube in a soft jawed vice and remove top nut carefully as it is under some load and will fly away, (but its not too much you can hold it with your hand). Tip out remaining oil slowly so as to not loose spacer on top of main fork spring. Clamp lower aluminium leg in vice by calliper mounts and remove allen screw in extreme end (if the wheel spindle was in you couldnt see it) This is the only part that might be a problem as the inner end may turn. An impact wrench may help or if not a simple broom handle shoved up the other end is often enough. Once this bolt is removed the leg will split. Now lever out the dust cover to reveal the wire circlip holding in the fork seal. Remove the clip and lever out carefully the old fork seal. Fit new seal using a large socket and mallet or something similar and reassemble in reverse order, not forgetting to add correct amount of new fork oil.

How much oil to fill in front sunspension on fj 1100 - 1985 model and to use 5 grade ?

I wouldn't use 5 wt oil.I fell it's a bit light. Proberbly 10 or 15 wt depending on your size.
Not sure about the quantity.It's not easy getting specs these days & Iv'e found most qualified bike mechanics (including me) set them by the fork oil level these days. I must admit however I do prefer the quantity as some forks are outside the golden rule- & of course then you a required to keep up to date with what theyare(some showas commonly)

To set them by level, check the distance from the top of the shock to the oil with the fork fully compressed without the spring. Set this to 110mm & you will be fine
