It could be a sticky thermostat, you could try removing the thermostat completely and see if this clarifies the problem, there might also be a sender unit that is giving an inaccurate reading. Are you sure head gasket is not blown? Do a compression test, smell the coolant , does it smell like petrol, is the engine oil milky! Make sure the radiator is running freely and has no blockages, also check if you can obtain a thermostat that will switch at a lower temperature threshold, sometimes the manufacturer produce these for countries with hot ambient air temperatures.
Sorry to hear that it spewed out the coolant on the run through the city, that is because its bound to run hotter in slow moving traffic, i really hope its not head gasket as it sounds as though its over pressurizing, there is usually a pressure relief valve on the coolant tank or radiator, if your regularly held up in traffic how about fitting a fan, now wouldn't that be original!? I,m sure you could find a nice small one of a small Japanese car! Check the relief valve is the right one and keep an open mind about the gasket, sometimes there might be a small leak from exhaust port to internal coolant water ways, that may only show up when all metals have reached running temperature. Thanks, got to try the thermostat. The bike had been running fine, until one run through the city at slow speed caused it to over heat and blow all the coolant out. After refilling the fluid it ran cool until another run though the city caused the over heating again.

I pulled the thermostat out, but it needs a gasket to seal the housing, so I had to put it back in. after a refill, and bleeding the air out it seem to run ok. the good thing is my girl friend has the same bike so we rode and compared running temps. I don't think it has a head gasket problem, at least I hope it doesn't, heading to N. Carolina next week on it
