On my 2007 Road star 1700 when I try to start it, it just clicks and battery is charged. What could be wrong?

Selenoid / starter motor.Try tapping gently as you push start with a small hammer but if no luck, needs to be removed, cleaned and serviced. Also possibility that a sensor is stopping it, eg in gear sensor jammed on.

Tire question

Bluing means the tires were properly brought up to temperature and run. Being street tires, they should be okay for a while but since you had track days, you may have shortened their lives considerably. Did you use tire warmers? Also, Michelins are great and progressive when new, but when they get old, they are not predictable at the limit. They'll grip and then let go without the same level of feedback you'll get from Dunlops or Bridgestones, in my experience. YMMV. I race on Michelin Power Races now but still prefer Dunlops for better feedback.

2006 yamaha roadstar fuel light

These blinks [flashes] are fault indication (Error Codes). From the number of blinks occur at one time switch ON, you can get an idea about the faulty circuit section inside it. This will make repair easy. These are called blinking codes. Make sure about the exact number of blinking of the standby/power LED, by switching On & OFF the set, for at least two times. Count it carefully. If you wish to get some details, check the site linked here. It has details about blinking codes, and fault locating procedure, to many popular brand TVs and other devices. http://electronicshelponline.blogspot.com/

The motorcycle will not start

I'm assuming that the wiring is intact - no shorted or cut wires - and the ignition key switch is fully operational.
The alternator or its regulator are failing so not enough power is delivered = the battery isn't sufficiently charged. The low voltage isn't strong enough to make the electronics from the dash function and when the bike is moving the voltage drops even lower so the lights aren't powered anymore.Check the voltages delivered by the alternator and the regulator and replace the faulty part.

How do you release the seat to get at the battery

Turning your key to the left (not right to the on position) will release the seat. I know someone who learned this lesson the hard way. Hope this helps.

My bike keeps cutting out

If its a 2 or 4 cyl....are you losing ignition on one or more cylinders? Sometimes the ignition components fail when they heat up, but test fine cold.
If your bike has pickup coils (located next to stator in left crankcase cover) test the resistance cold and then once it gets hot.

I have a 2002 Yamaha SR125 and my original Speedometer has packed in. Everything works apart from the mileage. Does anyone know how to wind the Clock back?

This is a highly ill - eagle act to do. In the old days we would put an electric drill on the drive cable, but now they make them tamper proof so they only go one way. The bezels are crimped on so you can't get inside them. I expect modern one may be electronic. How will your insurance company know what mileage you have done? I have never known an insurance cancel or fine due to mileage. You should have just disconnected it when you got close to the limit. Buy a used one and use them for 6 months in turns. There are two or three here 23K and one with 36k https://www.google.com/search?q=2002+yamaha+sr125+speedometer ..
