It could be the link from the starter button to the ignition coil. If you can check this for a current it should give an indication of the problem.

According to the service manual, there is no ballast resistor to go faulty. The coils get their power directly from thew battery via a fuse and the ignition switch. The switching side goes directly to the contact generator. Unless the ECU is faulty, the coils must be faulty or sub standard, if as you say they're burning out.

What grade transmision oil should

Any quality 80/90 hypoid gear oil will work. If you use a synthetic hypoid gear oil the rear end will have less friction, generate less heat , and last longer. Final drives are expensive and do not use much oil , maybe 1/2 cup. I recommend changing the rear end oil every other oil change.

I have a 1986 XV1100. want to know if it is an S

Any dealer should be able to ID the model from the VIN #. However the motorcycle has an ID plate on the frame neck on the opposite side from the number stamped on the frame . On the corner of the ID plate in small print Is usually the "MODEL XV1100S_". Unfortunately , it is sometimes rubbed off by the wiring harness. A "C" on the end of a model number designates that the bike is a California model with different pollution control devices.

It sounds like you have a dead cylinder. Without that cylinder firing, the petrol just builds up and spits out of the cylinder and into the exhaust.

I have a 2002 Yamaha SR125 and my original Speedometer has packed in. Everything works apart from the mileage. Does anyone know how to wind the Clock back?

This is a highly ill - eagle act to do. In the old days we would put an electric drill on the drive cable, but now they make them tamper proof so they only go one way. The bezels are crimped on so you can't get inside them. I expect modern one may be electronic. How will your insurance company know what mileage you have done? I have never known an insurance cancel or fine due to mileage. You should have just disconnected it when you got close to the limit. Buy a used one and use them for 6 months in turns. There are two or three here 23K and one with 36k https://www.google.com/search?q=2002+yamaha+sr125+speedometer ..
