If this is a 2 stroke engine it does not require an oil change.
If this is a 4 stroke engine most motorcycle manufacturers recommend 10W40 oil and an engine that size should require approximately 3 QTS of oil. However, personally I have always used 20W50 in all of my 4 strke motorcycle engines. You also mentioned a problem what is the problem with the KX 125?
WHAT IS THE CORRECT FUEL TO 2 STROKE OIL RATIO FOR
It all depends on what type (and brand) of two stroke oil you're using. For example, some non-synthetic two stroke oils are supposed to be mixed at a ratio of 20:1. While most synthetic oils are designed to be mixed anywhere from 36:1 to 100:1. Your best bet is to follow the advice of the folks at your dealer as to the type of oil to use - and then follow the recommended mixing ratio as detailed in the oil manufacturer's instructions.
Engine cut out now it wont start.
hi mate i got an kx85 but haver never come accross this problem check the reed valves are not sticking and check to make sure the exhaust port is clear not full of carbon build up also check air filter is clean not cloged good luck

I've been using the s100 cleaner. Never tried the brightener. I get mine from a sorta local (25 miles) shop

could be the float , clean carb again . if it was me id check the compression , easy stuff first . then check the spark output to know if your getting weak spark after its warmed up . the service manual explains how to check the electrical system.
Removing gear lever Kawasaki KX 125
Does it have a pinch bolt? If so undo and remove the pinch bolt, if the lever doesn't slide off you will need to pry the pinch part of the lever apart. It should then slide off. If it is worn it will hang loose, you will need a new lever, also check the splines on the shaft.
