The machine is doing the right thing by dying. The role of the choke is to block the air intake and allow more gas to go into the carb. It is meant for starting a cold engine. If you apply choke to a running engine, it will flood the carb and cylinder and not allow it to ignite. The spark is enough to ignite a mixture os gas and air and not gas alone. Hence the engine dies. So give choke only when starting under cold/freezing conditions.
There is nothing wrong with your bike.

2000 800B. While trying to break the nut on the front sprocket, should the sprocket move with the nut?
Of course. The bolt is in the middle of the splined shaft and holds the sprocket as well. Some have a hole where you insert a rod to lock the sprocket, or you can put the bike in 1st Gear and give the breaker bar a sharp tap with a lump hammer. Or you can jam the chain somewhere back by the back sprocket, for instance putting a ratchet strap through the rear forks and the wheel, or you can get someone to apply the rear brake.
