I think that Vincent is right. The most likely problem can be solved by replacing the the thermostatic switch. Before doing so, check the condition of the wires to the cooling fan. If they're OK then it's probably the thermovalve which is knackered and needs replacing. Check a technical manual on how to do this yourself. If you are confident that you can do it yourself then go ahead. If you're not then I suggest that you find a mechanic to do it for you.

When was the last time you change the thermostat and do a coolant flush?
The regular schedule is every 2 years or 24,000 miles.
Do not drive the car because over heat can warp the Northstar V8 aluminum head and blow the headgasket.
Do the thermostat change + flush and fill ASAP.
