I have a 2000 toyota celica gt. The door open light is on and have found that I can push down on hatch and it will go out. Is there an adjustment for this switch and if so where is it located?

you might want to see/ look at all the door buttons that are at each door to see if sticking= with each door open one at a time---rapidly push the button the door engages when shut--if one is sticking when you work with it the light will go out==not a auto mechanic but seen this before==usually spraying a light lubricant into each will cure this==problem is not usuaully at the dash but at one of the doors.
sounds like your hatch lock is not adjusted tight enough. My guess is your computer sees the hatch open and shuts down the fuel pump. find the locking bar where the hatch lock engages the van body, loosen the screws and push it in--hold in while you tighten screws. Sorry, I would send a picture but I don't have a manual for your car. If this doesn't work, you might need to adjust the switch in the door so it stick out more and gets pushed further by the hatch when closed.
If you dont feel like paying a ton of $$$ to get the light checked out by a mechanic, I recommend going to Advance Auto Parts, im not sure if it varies by state, but they do free Chech engine light diagnosis, bring a pen and paper however, so you can write down the code(s) given to you, good luck
