Where do you
hear a valve or flapper moving??? Behind the dash ( instrument panel ) It sounds to like you have a electrical problem , not overheating problem . You need to test to see what the real engine temp. is . Also have vehicle checked for DTC'S - diagnostic trouble codes ,Sounds like A/C is kicking on , the flaper noise you hear is probably the temp actuator inside the dash . You can buy the tool in the video at harbor freight cheap. Point it at upper radiator hose ,near the engine . The IPC illuminates the hot coolant temperature indicator in the message center when the IPC determines that the coolant temperature is greater than 128°C (262°F). The IPC receives a class 2 message from the PCM indicating the coolant temperature.
Are you getting any such message ?

Might be a weak or failing water pump... Does it leak antifreeze or do you have to add antifreeze very often? When the engine gets to operating temperature squeeze the top radiator hose and see if you can feel pressure from the water pump forcing water through it.

Are your cooling fans working? that will definately be a problem if not working. if they are working shut car off and feel the radiator is it the same temp all over or is it hot in only top or one smaller area. if you do not have same temp feeling on all of radiator your radiator may be plugged.

regular servicing is a must if done properly......if you do it right you do it right the first time.......in my experience for someone like yourslef, go to a dedicated transmission specialist to have the service done, they will be more open and knowledgeable about the transmission than some mechanic who is supposed to know everything about everything.
The thing with servicing is that it is there to prevent major wear and tear, and a transmissions oil is there to lubricate the inner working parts and if an automatic (you did not state) then it is under pressure going through small galleries, and could lead to major problems down road.
I am a massive and firm beleiver that regular servicing and "looking after" your engine and transmission will save you both time and money in the future

Either you have not bled the system, or possible fan not working, or head gasket problem. Solution
Step by Step
1. Check both hoses, do both have equal amount of pressure?
2. Run the vehicle where your gauge shows in the middle, shut the vehicle off then open the bleed valve near the heater line and wait till fluid comes out like a steady stream. Make sure you do not go low on coolant.
3. Turn on vehicle, turn on A/C high maximum blow check to make sure both fans are on. We are testing to make sure the fans at least work!.
4. After all this and you are still boiling over make sure your radiator cap is good if not then replace. Last but not least get a block tester to test for exhaust gases in the coolant. Rent one from autozone. $25.00 plus fluid which is about $8.00.
