I have a 2002 Buick Century. The Low coolant light stays on when I start the the car. After about a 1/2 hour of driving the light goes off. When I have put antifreeze in the reserve tank, the warning light still stays on. A local auto mechanics shop, did change my antifreeze last year. They did put in a different antifreeze than Dexacool. They told me that it was a better antifreeze. But, 3 months went buy before the low coolant light came on.

if the sensor was changed, the wiring to the sensor has to have a break in it somewhere. check for power and ground at your connector, and start tracing back to find the break. good luck!
I think your buick has a pressure coolant system so you may have air in the system and need too bleed it and for the light coming on while on the highway most likely low coolant when your driving the higher rpm the more coolant is drawn into the motor and triggering the light from coolant reservoir running low on coolant
In the surge tank, there is a sensor that detects the level of the coolant. It's most likely the sensor is stuck on the low position. All this sensor does is slide up and down as the coolant level goes up and down. You can tap the side of the surge tank near where the sensor plugs in and see if it will dislodge. You'll see the 2 wire plug at the bottom of the tank towards the front.
