Remove the coolant cap to relieve the pressure. Follow the radiator hose to the motor. The metalic/aluminum part that the hose is connected to holds the thermostat. 2 or 3 bolts hold it to the engine. remove these bolts & the thermostat. there may or may not be a gaket with your model. If so, replace them both. You will lose some coolant. add coolant when you're done, Make sure the engine is cold when u do all this.

Unlike most cars where the thermostat is on top of engine. The 300 has its thermostat at the bottom of the engine. follow the lower radiator hose from the radiator back to the engine block. It is hooked to the thermostat housing, and of course, the thermostat is just under the housing.
About changing or replacing the thermostat, it is very difficult to perform and requires an technician's expertise with a reasonable amount of time say, 3 to 5 hours. I'd advise you to take the vehicle to an auto shop for efficient and adequate replacement.
