I have a 96 Town and Country 3.8. The heater started to blow cold air and the temp gauge was not at normal operating temp. (Usualy is about halfway between hot and cold). I have changed the thermostat and it worked fine for a few days then back to cold air from the heater and the temp gauge is reading below normal as well. I think the new thermostat is stuck open again. I did not find any trash in the system. The radiator has about 30K mi on it too. The Radiator cap is about a year or two old. What is causing this?

The thermostat is the only thing that regulates engine temperature so if the engine temp is low and there is limited heat from the heater and the coolant level is full than the t-stat you just installed is defective.

Souds like it's way low on coolant. The heater will blow cold air when the cooling system is so low that there is no water (coolant) running through the heater core. Then the thermostat opens, it trys to be normal but the system is low so it gets too hot in just a few minutes. If its that low, there must be a leak somwhere.
Your temp sensor has nothing to do with your heater. The temp sensor needs coolant in order to work properly. So first check the coolant level because if it is low your heater will act the way you describe. Once the coolant gets low enough the heater will blow cold. Another possibility is the radiator cap. After the engine has warmed up it expands when it cools down it contracts. As it is contracting if the cap is weak air can be drawn into the system and cause air pockets to form and will cause the same problem
Check your coolant level and make sure its full, next i would look into replacing your thermostat, if your thermostat is stuck open your engine isnt able to reach operating temperature therefore heater output suffers, your coolant temp gauge should read around halfway when the engine is hot if its not look into replacing the thermostat, if your gauge is reading halfway check the cable going to your heater box when you adjust your temperature on your heater controls its possible that the cable broke or the blend door inside the heater box is stuck into the cold position allowing only cold air to come through the vents.
Temperature gauge should not be in the red unless you are talking about the temp control. Check hoses to heater core for a temp difference once the vehicle has reached operating temp. If a big differenced is noticed heater core may be plugged and may have to be flushed or replaced. Do the same with radiator hoses could also be a thermostat
