1998 Mazda 323 Protege - constantly overheating, even after fairly short runs (10 minutes). Coolant overflow bottle turns from green to dark grey each trip and almost "explodes".

Possible cause ;
1. Water pump
2. Thermostat
3. Bad head gasket.
4. Low coolant level.
Try to replace thermostat first , this way you illuminate thermostat and coolant level , you'll have to ad coolant after replacement and purge system.

Will crank but won't start. ran ok then parked it overnight and now it won't start.

this sounds as thought the ignition control switch has gone bad usually a very simple repair after sitting for to long they have a tendency to corrode internally usually less then 30 dollars to replace depending on your model

My 95 Mazda Protege starts and revs in park and neutral but will only idle in any other gear. I push the gas and it does not change from its idle speed. I have changed the plugs,wires, distributor,...

Repalce the throttle position sensor it is most likely faulty, the sensor is located opposite of the throttle valve it has a few wires going into it.

1997 mpv mini van runs great. While traveling i drove from SC to Atl GA....parked and went into motel for evening...the next morning i had very difficult time getting it re started....Like it was not...

I think you should check your battery and alternator.If they both check good you may have a battery draw,something draining the battery over night.Check your doors make sure they are closing like they should.
