SOURCE: Low Coolant light flashing on 1996 Buick Regal 3.8
The low coolant sensor should be located in the passenger side radiator tank, You need to take it out and clean the sludge off of it for it to work right. Or you can just unplug it and forget about it, the light will go out and it won't cause any problems.
SOURCE: replace coolant level sensor
THESE SENSORS ARE A KNOWN PROBLEM REPLACE IT, IT IS HELD IN BY A WIRE RETAINER CLIP, IT IS LOCATED IN THE PLASTIC SIDE TANK OF THE RADIATOR NEAR THE TOP OF THE TANK, ENGINE SIDE. THE PART IS ABOUT $60.00

I have a 97 Cutlass. The low coolant light is on as well. After talking to some of my mechanic buddy's this is a know problem with this model of vehicle (Cutlass/Malibu). You can either replace the coolant reservoir with the sensor or just ignore the problem as even with replacing the parts it is likely to come back on.
Hope this helps

Which coolant sensor did you change? The one in the passenger side tank in the radiator.
SOURCE: low coolant light is on with full radiator
Check the coolant top up reservoir. Low coolant sensor is usually in the overflow/reserve container.
Wash out and clean any dirt or corrosion from the sensor prong.
Refill to correct level with fresh coolant, then recheck alarm operation.
