The most common overheating problem with the Northstar engine is a blocked purge line. It's job is to purge air out of the cooling system.
There is a small diameter hose coming from near the top of the coolant tank (not the cap) ,this is the purge line.
With the engine idling, pull the purge line from the tank,if there is no coolant flow from this small hose,it is blocked and this will cause overheating. If the hose is clear, check for blockage at the nipple on the tank.Or trace the hose back until you find the blockage. The hose goes in to the engine to a crossover and comes out the other side to near the thermostat housing, the blockage may be there.

Why did the motor die while I was driving down the road when I turned on the a/c and fan?

If the engine overheated then the antifreeze may be getting into the engine, indicating a cracked head or block. check for water in oil via dipstick. .

2001 Oldsmobile Silhouette...Overheating, changed the thermostat, no signs of leaking, and the oil looks fine. At idle it takes 20 minutes to max the temperature gauge (red) and while driving it take

Usually the problem with no heat and overheating is low coolant, thermostat, or a faulty water pump impeller.
The radiator may not be full of liquid coolant, or the pump may not be moving the coolant thru the block.

Overheating engine overheating signal begins about 5 minutes after beginning to drive

I take it you have checked the coolant level . Sounds like a sticking thermostat.

What would cause overheating after 15 to 20 minutes of driving?

CHECK COOLANT LEVEL FIRST BUT IT SOUND LIKE FAULTY THERMOSTAT OR LEAKING HEAD WILL ALSO CAUSE OVERHEATING WHILE DRIVING.I WOULD REPLACE THERMOSTAT AND RADIATOR PRESSURE CAP FIRST.THAT WAY YOU KNOW IF HEAD GASKET LEAKING.CHECK ENGINE OIL IF IT LOOKS LIKE MILK SHAKE HEAD GASKET BLOWN.

I have a 1994 325i conv. the temp gauge cycles between normal operating temp and overheating as i'm driving.a few minutes in each range.could it be the radiator.blocked passages? is this common to older...

my 528i does, or did the same thing. Overheating is bad for those aluminum cylinder heads. 1st, replace the coolant. Then check to see if the electric cooling fans work, or cycle on, they most certainly would have to cycle on when the temp gauge is in the red zone.
1st thing most people do is replace the thermostat. However, if the temp goes from overheating to not overheating in less than a minute, the thermostat is working. The key thing to look for is why did it get to the red zone in the first place.
