Sounds like the clock is wired to the +12v from the stereo instead of ILLUM
from the ignition, this light should only come on with the headlights...
Connect the wire from the clock bulb to ILLUM on the stereo wiring - I cant find an escort manual so youll have to find which wire is clock power and which one is clock lighting, nedless to say you leave the clock power and ground as they are - just cut the lighting wire and attatch it to the ILLUM for the stereo with a crimp or block connector.

tape up everything you leave disconnected.
now the light will only come on with dipped or beam lights, not just all the time on its own.

since it;s only just started I suspect a relay, when you turn your lights on or off you'll hear a click, just find that relay and check it out, try a replacement one. its possibly staying "on" after lights have gone off, could have "welded" shut when you turned on the lights if the spring inside the relay has become weak or snapped...
other than that... no idea without any diagram (or an escort...)
I'm sure the clock goes from the relay and not directly off the light switch circuit itself... so definately check the relay (£3.50ish).
