I have a 2001 GMC sonoma 4.3 v6 that will not turn over. I can turn the key all the way but starter does not engage. New starter, New relay switch. I get power, all lights lite up, battery fully charged. I can hear relay click once when I turn key to try to start truck but nothing from starter

The problem is in the start circuit if the starter won't engage from the key. From battery to ignition switch to neutral park safety switch to starter relay to starter solenoid to starter to ground and back to battery-lights come on so switch is good, next check the neutral safety switch for power in and power out.
Once you get the start circuit working so starter engages from the key, then you can address the ignition circuit for possible no spark.

The starter relay may have a bad connection, this is where your battery connects, and a power wire runs to the starter, also these have a ignition wire which is approx 14-16 gauge wire. The relay could be cracked or the contacts inside are going bad. But the other is the neutral safety switch that you mention. I would check these first.

its the switch its self common prob with chevy's

theres a starter relay under your hood in the fuse box check that and also you may have a starter wire broken or loose its an easy check

Pull plug wire and install a philips screwdriver into the plug wire get it 1/4 inch away from a good ground and crank the engine over, is there spark? if so check that you have fuel pressure buy renting a fuel pressure test kit from schucks or auto zone and turn the Key to run position with the gage hooked up, it should read 50 PSI turn key off and wait 20 seconds should still have 20 PSI of fuel pressure, if no fuel pressure check fuel pump relay, then check fuse to pump. if you have a bad relay and are not getting fuel then check the oil pressure switch to see if you have oil pressure at the switch if no pressure then the oil pressure safety switch has died and needs to be replaced and should stark after replacing. If you have fuel then check the timing to see if you slipped timing belt.
