It sounds like a weak fuel pump is causing the occasional stalling, particularly when attempting acceleration at normal driving speeds. It's not unusual for it to idle with no problem if the pump is weak. Also, check the fuel lines to.from the fuel pump. If all else fails, you might consider adding an auxiliary fuel pump to counter the weak OEM pump.

Step 1
Ensure your vehicle has had time to cool down since the last time it was driven. The engine block should be cool to the touch.
Step 2
Remove the gas cap from your Ford Explorer and locate the Schrader valve attached to the vehicle's fuel line.
Step 3
Don eye protection and depress the Schrader valve until no more gas and air comes out.
Step 4
Locate the fuel filter. Your fuel filter will be located underneath the edge of the vehicle on the driver's side. There may be a plastic cover covering the filter. If so, unbolt it and remove it.
Step 5
Take the safety clips off of the ends of the filter. Then, use a "quick release" tool to remove the fuel lines that are attached to the filter.
Step 6
Connect your new filter to the fuel lines using the quick release tool to clamp the lines to each end of the filter.
Step 7
Reinstall the safety clips on the new fuel filter by clamping them on each end of the filter.
Step 8
Start your Ford Explorer and run at idle for five minutes. Visually verify underneath the body of the vehicle that there are no leaks from the fuel filter
you don't say whether you have had the trouble codes tested, this is a very important 1st test with a problem like you have, here is how you test for trouble codes, here is how u do that test, go to the link
if not codes show then suspect the fuel pump may be worn out and losing pressure or the MAF (Mass Airflow) sensor may be defective, the MAF is located in the large air intake pipe to the engine at the air filter, to test the fuel pressure u will need to buy a fuel pressure test tool for Ford cars and trucks, it is better cost wise to just let someone test this at a shop, remember the truck must be acting up for the test to be valid.
Shouldn't cost much for 10 minutes work to test fuel pressure & confirm pump condition, but do it when vehicle 's been running for a while, long enough for pump to get heated up.

ISSUE:
A reduced power, hesitation, stalling at low vehicle speed, idling and/or a no start condition may occur on some vehicles in hot ambient temperatures and/or high altitudes. In addition, a no start may result while the engine is still hot and the vehicle has been parked for a short period. A stall may also occur when moving the vehicle from idle. This may be caused by a lack of vapor ports in the fuel pump, resulting in a vapor lock condition or internal high wear of the fuel pump components due to tank contaminants. ACTION:
Perform normal diagnostic routines as described in the appropriate year Powertrain Control/Emissions Diagnosis Manual (PC/ED). If the condition still exists after all diagnostics are followed, replace the fuel pump with a new turbine fuel pump. Refer to the following Part Application Chart for correct part usage. Also, replace in-line fuel filter with a new filter (E7DZ-9155-A). The new turbine fuel pump will reduce the possibility of vapor lock in high ambient temperatures. Refer to the appropriate model/year Service Manual for removal and installation procedures.
