It's not that difficult you see there's a little push clip down at the base where the steel rods go into the seat top you can push and then it will come out but I'm also going to attach a video it should help Remove headrest from 1999 vw cabrio Google Search

Tracy, Some just pull straight up and out, there may be a pin hole, lever or button just under head rest which will release and allow head rest to be pulled up or pushed down, it does take some force as they do like to get stuck.

How To Remove Back Headrest BMW E36 - YouTube

There is a little button at the base of the headrest that you press in while pushing it down.

1. Lift headrest and headrest support bars trim all the way up.

2. Insert tongue depressor (or slim jim) down the front side of the headrest bar. Push depressor down as far as possible. When the depressor is beneath the headrest trim piece, push headrest all of the way down.

3. Lift headrest to remove.

Same proceedure as front headrests but tilt the back of the seats forward about halfway. Push the little clip in on top of the seat, by the chrome rail, pull the headrest up and slide out of the hole. Push the back of the seat back, lift up the bottom seat and tilt forward. Lay the back seats down. Done.

there is a small button by the metal shaft that goes into the seat. push that in while lifting headrest up and it will come out

The headrest has on obvious button to adjust the height and another button kinda hidden to remove the headrest. The black plastic ring at the base where the metal poles insert into the seat is where the two buttons. You probably noticed the obvious on that sticks out of the side of one of the rings. The other plastic ring contains a similar button that is not noticeable due to it being flush with the side of the plastic ring. Adjust the headrest to its highest position, then locate the "hidden" button on the other plastic ring and depress it while lifting on the headrest and it should come out.
