Are you getting a check engine light on? If you are, take it to your local auto parts to have it scanned for codes, it's free. Sounds like a plugged up catalytic converter.

It sounds like the exhaust system is clogged. Try looking under your vehicle with a flashlight and look for bends/kinks in the exhaust pipes. I had a similar problem with my car, when the catalytic converter broke apart, and clogged the exhaust. i could barely reach 20km/hr, and the engine would shut off at 2500 rpm. Replacing the catalytic converter fixed my problem.

Is it fuel injected or does it have a carburetor?

You may have a bad catalytic converter. They start coming apart and plug your exhaust. They cause all kinds of run problems.

It would stop at any given time, where sometimes it would restart and sometimes it doesn't. then after 4-5 hours it starts right up.

Your best bet is to take it to a ASE certified repair shop ! You have no idea of the electronics involved an you don't have the diagnostic tools to deal with this . I know you think you do but you don't have a clue.

Bad ignition module likely. These have two parts, a low speed section and a high speed section.

Why won't my car Rpms go over 2,000 without

It may not be getting enough gas. Maybe the gas filter is dirty and slowing the flow of fuel down at higher RPMs. Also could be a hole in the gas line and when the engine needs a lot of fuel it starts to suck in a little air through the hole.

have the fault codes read and use a quality injector cleaner in the fuel
it could be low fuel pressure , injector problems or accelerator position sensor related
