How hot does it get in degrees F? Does the cooling fan turn on? Is the coolant boiling over?
As far as your temp gage, maybe you have air in the system? I would think as far as you have driven, if you didn't bleed the system, it should have worked it's way out?
You could have combustion gasses getting into the coolant because of gasket issue?

Not too sure I ended up taking to the shop. They are going to change the thermostat for the second time and if that doesn't work they are thinking blown head gaskets.

It is either a blown head gasket or a cracked head. Depending on which motor your civic has, this could be a tricky replacement, either way, you have to remove the head off of the motor, and then take the head to have it pressure checked to see if there is a crack in it. Nine times out of ten though, you can see a crack in the head with your eye, but you have to have the right "eye" to be able to see the crack.

Try synthedic oil but make sure its always full of coolant you might not think it leaks but when you start it up and go down the road the will leak and also check to see if you got the right therostat, get onw that opens up at a cooler temp

CHECK YOUR RELAY IN YOUR FUSE BOX UNDER THE HOOD ON THE DRIVERS SIDE INNER FENDER. THE A/C AND THE HEATER RELAY ARE SAME. CHECK AND SEE IF THE A/C REALY WORKS BY TURNING ON YOUR A/C SWITCH. THE ELECTRIC FAN SHOULD START RIGHT AWAY. OTHERWISE YOU HAVE TO WAIT TILL THE ENGINE ACHEIVES OPERATING TEMP TO KICK THE FAN ON. IF ONE DON'T WORK AND OTHER OTHER DOES... SWITCH THE RELAY AND SEE IF IT WORKS. BEEN THERE AND DONE THAT. $9.00 FOR A NEW RELAY AT CHECKER AUTO PARTS.

Let the engine cooldown,then open the bleed screw on on the thermostat house,do not remove just loosen----fill water in the radiator bottle slowly and watch for water coming out of the bleed screw----
sometimes the bleed screw is blocked due to anti-freeze-then take the screw off completely ,clean and replace----always make sure the engine is cool
