Probably in the early stage of a head gasket problem, Subarus run great even with blown head gaskets, every once in a while the temperature guage will spike and blow coolant out of the overflow bottle, you may be able to detect exhaust gases in the cooling system by taking a whiff of the radiator or overflow bottle.
SOURCE: temp gauge goes up to hot then back down, up and down...
That is very possible.Your radiator could also be plugged,You water pump could be could be giving out or the head gaskets are bad..Those are all worse case scenario's But yes the thermostat could be the problem..I'd start with that then make sure your clutch is working properly..Hope this helps you and have a great day

Brown gunk is either oil from a blown head gasket or 'stop-leak'. The head gasket is expensive to fix.
If you have over 150,000 miles probably cheaper to replace the car if the head gasket is bad.
