Does the fuel tank need to be removed on 2005 Buick Century to change the fuel pump?

Not sure if there is one. My '05 Buick Century does not have an access panel. Pull back the carpet in the trunk and look for a round or oval panel with screws. It would be right over the top of the fuel tank, right over where the pump module sits in the tank-where the fuel lines come out of the tank-that is where the module is.
If there is no access panel, it is a bit harder to change out the pump. You have to remove the gas tank, and pull it from under the vehicle. It was not that difficult on my Century-I did it on my driveway. Look at a repair manual for the complete procedure.

The fuel pump is located in the fuel tank.
There is a hangar assembly fastened to the tank top that holds the pump and strainer and the fuel level sender.
In order to change the fuel pump the fuel tank needs to be removed to allow the hangar to be removed.

The fuel tank is in the fuel tank, some models of cars have a fuel pump access cover in the trunk. Remove carpet in trunk to see if there is an access cover. If there is remove cover , disconnect fuel lines and electrical connections and remove sending unit from tank. Pump will be attached to fuel lines on sending unit. If no access cover you must remove tank from vehicle, this is a much harder procedure.Unless you have the proper tools and a hoist it is best left to experts.

Fuel pump is in the tank, fuel filter is along the subframe rail by the rear wheels, either left or right side.

never evan seen a buick let alone worked on one but i would imagine that yes you can get to the sender unit from under the seat
