Having a problem with tempature gauge jumping up and down from hot to cold. I have change the coolant tempature sensor and 1week later it started this.

i think there is 2 sensors or your thermostat might be stuck. you can remove the stat and see what happens if it runs cool then replace it

As long as your gauge is still moving up, there's no real problem. You have heat coming from the heater. It's only a problem if it's getting too hot. What's going on is that you don't let the vehicle run long enough, and it's so cold outside that the engine stays cold. It raises in temp when your stopped because there's no airflow through the radiator. The thermostat just heats up the engine block, and won't change the reading on the gauge. When this goes bad your car will overheat in just a few miles.

Make sure you have gotten all the air out of the system by running the car with the cap off for a bit.. also make sure the radiator overflow if at proper level.. next look at your radiator and see if it is plugged up with trash bugs what ever this will slow your cooling big time.. also look between your radiator and your air condition condensor and make sure its clean also there can be trash in there causing it to heat .. also check belts make sure they are tight.. really sounds like you started with air in system and system might be air locked needing to run a bit with cap off when cool. dont take cap off when hot ... make sure over flow is full also... thanks and holler if you need more. Check the cooling fan switch. It appears your auxiliary electric cooling fan isn't going on when at idle. and engine temp increases. While you are driving, air is being rammed thru your radiator as you cruise along, so it isn't overheating, at idle, that isn't happening, and the fan should go on as the temp goes up. When the ac is switched on, the fan is being signaled to operate due to the heavy ac load on the cooling system.

Hi. the vdc at the sensor seems to be fine. if the ground is sufficient, i would replace the gauge. its malfunctioning. Check for loose connection at gauge before replacing the gauge.
