What side is the #2 cylinder on for a 2007 Santa Fe 2.7L V6 the engine light came on it said #2 missfired plug or coil pack?

A 2007 should not need a coil pack. If there is no dead skip while running its probably a stored fault. Do not replace any coils without proving they are bad (expensive). Perform an OBDII scan with a printout and then delete fault history. Check again in a week to see any current faults. Let the scan be your guide to parts replacement . An occasional misfire is common.

After changing the coil pack and spark plug, why is it still skipping?

Timing could have jumped. Could be a bad head gasket also. even possible to be a small hole in piston check the cylinder for compression. Check the fuel injector to that cylinder if you have bad air to gas mixture it will throw a code of misfire change fuel filter check fuel injector to see if clogged. most likely it is the fuel injector .

3.3l V6. Why is it skipping?

believe it or not , it might be an injector problem along with low fuel pressure and not electrical at all
run the fault codes to determine the fault area

Change ignition coilon clylinder 1 in 2009 Toyota corolla? got the code P0351

First of all, even though the Issue says Coil Pack, that does not necessarily mean the Coil Pack is Bad. It could be a Loose Connection, it could be a Bad Wire, it can also mean a Bad Spark Plug or fouled Injector but to answer your question...

The Coil Pack is located under the Plastic on top of your Engine and Directly connects to the Spark Plug. If I was you I would Swap the #1 and #3 Coil Packs and see if the Fault Code follows the Coil Pack. If it does then replace the Coil Pack. If it stays with the Cylinder, I would be checking the Connectors, Wires, Injector and Spark Plug.

2004 Sorento began with code P0305, cyl #5 misfire. Inspected and replaced plugs, wires, and coil pack on cyl #2. Repair shop told me cyl #5 injector bad so they replaced. Still has misfire.I suggeste

If you had code P0305, I don't know why they would have done anything to the #2 cylinder but if they have already replaced the plugs, wires and injector; here are a few more items to check:
1) Check connections from ECM. Look for any corrosions or bent/broken pins.
2) Check the fuel line pressure
3) Check the engine compression
4) And if the above are good, then you will probably have a defective ECM

I would say its the coil. A crank or cam sensor could cause one cylinder to miss, or go completely dead, but I doubt it would affect two cylinders. And you would get a code for either sensor.
