is there any check engine lights on? also a leak in the vacuum lines will make it jump in and out of over drive. could be a few problems. wish i could help more, sorry. if you have a vacuum leak it would also make you heater controls not work like they should, like if you put it on defrost it will only come out the vents and so on.
I dont think your problem is related to the intake manifold gasket.My experiance leads me to believe that your speed sensor is bad(VSS) Back in the day it was a cable attached to the tranny that gave you mph on your dash.In today's "fly by wire" society this would be the most likely suspect.symtoms would include downshifting for no reason your speedometer would drop to 0 and the tach would skyrocket.Vehicle may come right out of it and operate normally,or it may continue to buck for a while and then even out.I would start there.
Could be your fuel filter is plugged if you have one. My 2005 doesn't as there are filter screens in each injector. Find a buddy with a reader and go for a test ride with it plugged in. There are too many possibilities to mention

Low oil pressure is making the light come on.
The engine might seize up on you and that's big bucks.
Or course having the oil light come on may be big bucks as well. It means the bearings might be worn out and you'll either need to overhaul the engine or get a replacement engine - or new car!
You best bet would be to look for the vacuum diagram and just take a day to make sure all of the lines to the engine and tranny are all correct. If its not it and while bucking the car feels like its going to turn off on you then it maybe a fuel delivery problem.
