I have a 2000 Chevy Tahoe that did the same thing. I changed the oil pump, new oil, and head gasket. It now has power and doesn't fall on its face when I step into the throttle hard. Hope this helps.
Get a fuel regulator test done. I have same truck. Had same problem. 1 place told me my trans was bad. The fuse would not allow the fuel pump to work, then not work, replace the fuel filter first,if this does no good, have the fuel pressure checked. If this was helpful, please rate, thank you.

sounds like poss throttle pos sensor prob./ could also be problem w/fuel pump not pumping enough fuel at high speed. poss fuel filter clogging also. have someone check pump pressure.
Could be a faulty Mass Air Flow Sensor, Idle Air Control Motor, just needs a tune-up, bad fuel pump, clogged fuel filter, bad spark plug, faulty computer... hard to tell. Take it to a shop to figure out what is wrong with it and if you are able, fix it yourself, otherwise let the shop fix it.
Could need a new screen sock
