Sounds like bad oil pressure switch. Is the engine making any loud noise(s)? I'd replace oil pressure switch and/or check connection at oil pressure switch.
How is the sensor connected to the engine? I had a 2000 model Pajero which did the same thing. It had to do with the way the sensor was connected to the engine, the hollow bolt they used was aftermarket and didn't let enough oil through to the sensor. So the oil has to warm up first before it can get through to the sensor.
Anytime the oil light goes on, I would think that the pressure has dropped, assuming the oil sending unit is working properly.
How long ago was the engine oil changed?
I had a low oil pressure signal in a 1997 Cadillac Deville LImousine which went away after I had the engine oil changed.
Sometimes, the wrong viscosity or oil break down can cause the oil pump not to generate enough pressure for the oil pressure light to go on.
I looked at the Recalls for the 2.7L engine and couldn't find anything regarding engine oil pressure light going on mistakenly, but this doesn't mean that it's not a problem on your vehicle. There are 2 other sized engines for this vehicle.
So, what's the engine size for this Chrysler Sebring?
Does the engine smoke at all after all of this?
This fix works for 2.7L engine. Worth having your mechanic look at.

Slide locking ring back into place. Attach the connector back on the oil pressure switch. Spot tape the wire/vent to follow the harness towards the top of the engine compartment.
You need to have oil pressure checked manually with oil pressure guage. There is a good possibility that the engine has excessive wear or a bad oil pump and oil pressure is really low. (It's like have a bad heart) That would definitely trigger oil light. If you have low pressure and its not taken care of immediately it will ruin the engine from lack of lubrication to vital parts.
