've an '89 chev 1500 which is having problems with bogging down while idling or while driving. At the same time that the engine bogs down, an audible "click" is heard and all my dash gauges flick to near zero then back to normal... what might be causing this? Fuel supply? Power supply?

The cylinder 7 misfire is likely a symptom of the problem, not the problem itself.
Typically, the catalytic converter has an oxygen sensor in front and behind it. When the vehicle is warm and running in closed loop mode, the upstream oxygen sensor waveform reading should fluctuate. The downstream 02 sensor reading should be fairly steady. Typically the P0420 code triggers the check engine light if the readings of the two sensors are similar. This is indicative of (among other things - such as faulty sensors in the "emissions loop") a converter that is not working as efficiently as it should be.
I do not believe that it is a problem with a valve/head gasket or cam.

check the intake gaskets. in the middle front and middle rear. If they are oily, it more than likely sucked part of the gasket in. When it warms up the leak gets bigger. The easy way to check is to get some carb cleaner and spray all around the intake while idling and warm. DO NOT SPRAY ANY EXHAUST PARTS , carb cleaner is combustible. The truck should stumble or even shut off when spraying with the carb cleaner if there is a leak.

Check the fuel pressure at the shredder valve, you should have 13 to 13.5psi, anything other then that will give you problems in the GM TBI. If the pressure is bad, then you may have to replace the fuel pressure regulator at the bottom of the TB.
