MY 2004 T BIRD IS OVER HEATING IF I STOP THE CAR TURN OFF THE SWITCH THEN TURN IT BACK ON THE TEMP WILL SHOW NORMAL

Replace thermostat. Then always make sure the fluid level is always kept up to the top of radiator.

Your radiator is getting clogged up with mud causing the lack of air flow through the radiator. You may want to install a mud deflector in front of your radiator to keep the mud from clogging up the radiator and may be run your antifreeze ratio 40/60 (antifreeze/water) the higher the water content the better the heat transfer, but your have to keep an eye on the level of the coolant level more often. Water will evaporate quicker but too muck antifreeze will have poor heat transfer and 100% antifreeze will gel when heated causing poor circulation causing overheating. Bad misfire

run the fault codes as misfire can be from injectors , low fuel pressure and ignition problems
all temp gauges will show a rise on stopping an engine as there is still residual heat in the block and heads with no water circulation and cooling
the fire from the exhaust indicates an exhaust valve is not closing properly so a compression test would be in order to check for valve problems or hydraulic follower problems

This may be an electrical issue in the dash and a phantom problem. I would suggest measuring the water temperature in the radiator to see if it matches the guage (normal temperature should be around 90decC. Higher revs would increase water flow via the water pump not lower it so I am thinking some kind of restriction - check your radiator fins are not blocked there could be blockages in the radiator or less likely in the block valleys, other things to check are that your hoses are in good condition and they don't flatten with heat. A faulty thermostat is also possible.

Check the temp. switch the one that goes to the guage either a bad switch or a short in the wire.

Did you bleed the air from the system? That must be done or the system developed air blocks and this causes it to run hot.

If your "check engine" light is turn on, I suggest scanned the PCM to know exactly what fault code is stored there. Additionally, could be some problem with the "temp sending unit".
