The theft light issue is a good observation. Have you replaced the key tumbler or an ignition component lately? Has there been a lightning storm close very recently?

What the flashing security light is indicating is an attempt to relearn the key you are using.
Turn the key to run position, allow light to flash for 10 minutes, when light stops flashing turn ignition to OFF position for 5 seconds, turn ignition to run position and start over. Do this for 3 consecutive cycles, the the theft system will relearn the key cylinder code and store it once again.
Try that first before you go any further.
Let me know what you find.
Regards,

SOURCE: Rough/Low idle then dies.

is your check engine light on any longer ? also has your throttle plate ever been cleaned that can cause this symptom it will get build up on it and not allow correct idle ,you can clean it yourself ,rmove the big hose that goes up that goes up to your throttle body and get a can of deep creep sold at any parts house ,then spray the deep creep on a shop rag and by hand wipe out as much of the flap areas as you can ,its hard to get your fingers in there but be patient . but dont spray any thing down in the throttle throat it may cause more problems ,try the wipout of the throtlle area and see if it help your idle !

Dies on exceleration

Have you had your fuel pressure tested? Low pressure and/or volume could cause the truck to idle normally, but not be able to take any load. There is a very high failure rate on these fuel pumps.

89 GMC 5.7L. P/U When driving after a few miles the truck dies. Let it cool down and it starts back up till it warms up then it dies again.Sometimes i go 2 miles or 20 miles just depends.

Check the primary and secondary resistance of your coil. Also check spark plug wire resistance. The coil will short out when it heats up if it is going bad.

Check TPS for smooth and linear electrical response over the entire range of motion. If the response is jumpy or erratic at all, replace TPS.

Low oil when engine warms up gmc sierra 1995

30-40 psi of oil pressure is fine for many vehicles including your GMC. I am assuming that the truck has more than 100,000 miles on it and still has the original engine in it. By rule of thumb you only need 10 psi per 1000 rpms in a typical street driven engine to give adequate oil pressure to keep the bearings from oil starvation. The oil pressure is typically higher when initial start up occurs because it is more viscous due to the temperature of the oil as the engines oil warms up the visconsity thins out and the oil flows more smoothly. The drop in oil pressure is a normal occurance. Above 45 is more than required for a daily driven street engine. I believe that the specs on that engine only list 30- 45 psi.
