The first thing to do is check the pressure with a mechanical gage to see if the pressure is that high. Then you can rule out the pump or other problems.
Your oil pressure sensor is not very expensive and is easy to change, I would start with that. If it does not cure your issue I would suggest hooking in a mechanical gauge to verify actual pressure and if it is not 80 psi I would look at changing out the factory gauge.
It sounds like there is a problem with the oil pressure sending circuit. The oil pressure sender changes voltage according to the differences in oil pressure. If it is pegged all the way to the max, there may be a short (or open, depending on the way the circuit is designed). I would take it to a shop and have the oil pressure tested with a mechanical gauge first, just to be sure there isn't a problem with the relief valve on the oil pump. But if the oil pressure gauge isn't working properly, you won't know if there really is a problem with the oil pressure, and that could be catastrophic to the engine.
It could be the sensor that screws into the back of the intake manifold next to the distributor. It is an electric sensor so it could also be the connection where the harness plugs onto it. Check to make sure nobody unplugged or loosened the wires during a tuneup. Those are the inexpensive things to check. Since you said the gauge is stuck on 80 I don't think it is the gauge itself since the tend to go to 0. If it is the gauge the whole gauge cluster panel will need to be changed out. You may have to take it to a shop to determine if the gauge cluster is the cause. Good luck.
