Car overheats when idle but no signs of blown head gasket
Well with mine i was getting "air" trapped in the heater core and fluctuating temp guage. I burped it and heater began working. Then it happened agin and i knew there was a problem. It was combustion gasses being forced into the coolant system. AKA blown head gasket
When the engine is "over heating" are the radiator cooling fans running on high speed?
Has there been any engine work performed on the vehicle lately?

So it sounds as though it may be a circulation issue.
You may need to change the thermostat as it is possible it may be stuck closed.
Do you feel heater from the heater when the engine goes into its over heat condition. Make sure you turn the heater temp setting to high heat and see if it is cool air or hot.

Check the crankcase oil and make sure it is not going in there. Pull the engine oil dipstick out, it should not be a milky color.
If you are loosing that much coolant, is there white smoke coming out of the tail pipe?

The big question is were is the coolant going. You said the overflow tank is empty after 2-3 days, its not on the ground, its not in the engine oil and it is not being burned by the engine.
It is possible there is an air trap in the engine. Did the problem start as soon as you were done with the water pump change?
Check the transmission dip stick, make sure it is not milky colored.

fan kick on at high speed. no recent engine work
Sorry it took so long to reply. I just recently replaced thermostat, radiator, and water pump. I fear i might have a blown head gasket, bad intake manifold gasket, or both because i have no coolant leaks on ground and the reservoir doesn't hold coolant after 2-3 days after i fill it.
oil color looks fine, no white smoke coming out of tail pipe. do you think air is in the coolant system
I have an 02 Chevy Monte Carlo. I am experiencing a problem where I have oil in my radiator. My car also overheats when driving short distances.
