If drain is difficult to reach or won't open properly, remove the lower radiator hose. You can easily drain system from there. Make sure you use a good drain pan and that the engine is cool. Once removed coolant comes out really fast from there.

Pull the relay in the fuse box or remove the connector on the temperature coolant sensor.These two items have to be tested as per the directions in the vehicle's shop manual. Furthermore the circuitry and the ECU must be tested as well. Good luck

I used to have a Pontiac in which I had to pull the front tire off and then get to the plugs by going over the A frame. Doesn't mean it will work on your Grand Prix but you might try it.

2000 Grand Prix losing coolant

This all sounds like a leaking head gasket, the fast guage swing is caused by air pockets around the temp sensor.
