30-40 psi of oil pressure is fine for many vehicles including your GMC. I am assuming that the truck has more than 100,000 miles on it and still has the original engine in it. By rule of thumb you only need 10 psi per 1000 rpms in a typical street driven engine to give adequate oil pressure to keep the bearings from oil starvation. The oil pressure is typically higher when initial start up occurs because it is more viscous due to the temperature of the oil as the engines oil warms up the visconsity thins out and the oil flows more smoothly. The drop in oil pressure is a normal occurance. Above 45 is more than required for a daily driven street engine. I believe that the specs on that engine only list 30- 45 psi.

The rule of thumb is to start as far away from the master cylinder as poss. so it means you start at the right rear, left rear, right front, then at last left front. There is a little a little weep bolt on each calliper it needs to be un lossened when break is fully applyed then tighten weep bolt back up pump the breaks while weep bolt is still tight then hold brake pedal down to floor lossen weep bolt till a full steam of fluid comes out tighten bolt back up, now move on to the next break calliper and repeat this same proccess till you finished. could be wrong here but sure sounds like its out of fluid at the "master cylinder" look near the brake master cylinder for a seperate little container for the clutch. bleeding is tricky because it is small and wants to run out of fluid quick. you have to keep adding each time you bleed. either the clutch master cylinder went bad or the clutch slave went bad. look for dripping fluid

Not difficult to do, just make sure you have plenty of extra fluid keeping the reservoir full. Bleeding will need an assistance. There's a bleeding valve on the slave cylinder unit it self. The unit does wear out over times rebuild or replace may be necessary due to loss of clutch slave cyclinder pressure. Have your assistance pump the clutch paddle 4-5 times and hold it to the floor while you turn the bleed valve quickly open and shut it off. do this 3-4 times and that should do the trick. Keep in mind, do not let your assistance release the clutch paddle up while you bleeding the valves, keep it to the floor until the bleeding is done and the valve is close. Hope that help, good luck.
