I have a 1996 pontiac grand prix with a 3.1L that is overheating installed a new thermostat and a new water pump bled air pocket out of system changed radiator cap. car runs at about 210 degrees in driveway all day long take it for a drive and temp fluctuates between 150 and 210 then over heats

Indicates a head gasket problem
at idle the gasket is sealing but under load is allowing compression into water jacket
do a compression test
check cat converter for failure blocking exhaust

It is probably the problem. To make shure that need to change the gaskets, one of the symptoms use to be thet the temp rises when you are running at speed 50+ average, where is supposed that the car gets a lot of air due by the speed and nobody thinks that will be overheated.

change the sending unit to the fan, if that doesnt work check for power too the fan or even a bad fan

Did you bleed the radiator after refilling because it sure sounds like you have an air lock in there.

The thermostat opens at 195 F degree, and if the cooling system runs properly, then the temperature will stay the same because the radiator will exchange the heat to air stream. If the radiator is partially obstructed, sometimes only 15%, or there are air pockets in the system, or the water pump is giving up, then the temperature will increase.

Are you sure you got all the air out of the cooling system? Air pockets are very common problem when you do any work to the cooling system. An air pocket will do what you discribe.
