Sounds Like The Parking PAW In the Transmission Has Broke Off,
If Linkage or Cable Adjustment is Trued Then its a Expensive Repair at The Trans Shop. this Happens when it is Shifted into PARK while Vehicle is still Moving. Hate to Have BAD NEWS But this Is what I Have Seen Many times as A Fleet Mech/Tech

My 2003 silverado ss will crank but then immediately shuts off in less then a sec, almost like there is a killswitch or something.

most likely it is your fuel pump. which is inside the tank. check the pressure at the fuel line goin to the motor. the fuel pump has been a reoccuring problem with the chevy

1991 Chevy Silverado Rolls while in Park

Hi, This looks like the Pawl in the gearbox has been broken/damaged or even left out when the box was overhauled.
It lock the gearbox whilst in park so acting like a brake.
It could have occurred if someone put the vehicle in park whilst still moving.
