2005 Dodge Ram 1500 5.7 Hemi running hot. Will a bad manifold gasket cause this problem

A manifold gasket has very little to do with engine cooling so, No!
Firstly check your fluid levels are correct. Don't worry, I've made that mistake!
The next cause of overheating could be the thermostat. A cheap and fairly easy fix to do yourself.
Check you coolant to see if there is oil mixed in it. This will suggest a faulty head gasket.
Run the engine at idle speed with the hood open, until it gets to working temperature. As it does CAREFULLY touch the top radiator hose feeling for it heating up. Also listen and watch for the radiator fan switching on. If the pipe stays cool it is probably the thermostat stuck shut.
If the heat starts getting too high and the fan doesn't 'kick' in, it could be the fan switch.
If the vehicle gets TOO hot turn it OFF and let it cool down.

2002 dodge ram 1500 motor has a little knock but drives good and doesnt run hot. Bought it from a man he said he ran it hot one time and now it has oil and water mixing. What do u think will fix it

Probably another engine.
Since you don't know why it got hot in the first place, it would be impossible to know what is damaged now.
The knock is probably from lack of lubrication because of the contaminated oil. And that would mean all of the bearings are worn. And a leaking head gasket or cracked head could allow coolant into the oil.
If it has more than 90,000 miles on the engine its probably not worth rebuilding if it needs all of the bearings replaced plus the cause of the leaking oil/coolant repaired.

Oil in water,runs hot

Sorry, one of 3 expensive things. Blown head gasket, cracked head, or cracked block.

2005 Dodge Ram1500 White Mist/smoke from exhaust pipe.

One of the gaskets has blown at a point where the a water jacket is blowning into the cylinders but not mixing with an oil jacket on the heads. Try to use some Bars Leak and see if you can get it to seal and if not, their are also aluminum shavings mixed with sealer for some of the worse problems. If it seals you will then know that it will need a gasket replacement at some point

Running hot?

2 possible things. 1st(cheapest) you have air in cooling system. Need to burp it. 2nd(expensive) you may have blown head gasket. I tend to think air is in cooling system and your level is low.

I would say that the gasket is not properly installed, or things were not properly tightened. It is clear that coolant and oil are escaping from their correct channels and mixing, but it's not possible that you "blew" the gasket driving 10 blocks. The good news is that you're no worse off than you were before, but the bad news is that you will have to take it apart again and get some help installing the gasket correctly.

No heat

No heat can mean low coolant in the radiator. Check that. Also would mean you have a coolant leak. Might possibly be a restricted heater core. Possibly a blend door in the dash that quit working. Thermostat could be faulty allowing coolant to flow continuously.
