You can not leave the thermostat out. It can in some cars run cold or others the antifreeze will become heat saturated. Both are real bad. Replace the thermostat. You need to check Everything, one by one. The radiator (for clogs), hoses (for damage, pinched), Defective clutch on fan, and water-pump (its new but is the belt slipping), If everything checks out then you may have a clog inside the engine or heads, itself.

honestly do not know as i have never seen a warm up valve ,i can only sumise that it provides hot air to the inlet manifold for use in extreme cold so yes it must be possible just to leave it off
