If you're in the USA, take the car to your nearest Auto Zone auto parts store. Ask for a free OBD2 test. It sounds like your MAF (Mass Air Flow sensor) may need to be replaced, but the OBD2 test should tell you for sure.

I have a 88 chevy s10 that has a 2.8 out of a 96 s10 it will start and run but when you turn the steering wheel to the right or left the engine will die so i unplugged everything goin up the steering...

I would say that the problem is going to be under the hood in the steering somewhere. Not in the steering column. Check to make sure that the tie rods are not pulling or pinching a wire.

2002 Impala engine died while driving, then started as usual

If you were to turn the ignition off when you are driving it would do the same thing. My guess is that a critical ignition wire is either shorting or coming loose when inertia exists through your left turn.

In park turn the wheel all the way to the left. Did the car die? Try wiggling the red wires connecting through the starter, battery, and such with the engine running. Also try wiggling the wires through the steering column to the ignition.
