It is easy, but you need to not throw out all the 1.6l mounts, air box, coolant overflow and oil dip stick/fill tube. You will need an engine lift and basic tools. Watch videos and read forums until you are sick of them.

I have this engine in my ford galaxy and yes i have removed the sump when i first got it owing to previous owners never changing the oil ,long story ,once sump is off then its easy
cannot say i have done one but the golf and polo come off on the earlier models ,perhaps its a gearbox out and flywheel off job which means its a drop out the bottom the complete unit ,i just do not know sorry
Did you have changed a cylinder head gasket? Possible turn around. If not need to change oil pump.It is easy.Just remove the sump but before that drain the oil because........Get new sump gasket. What about oil pressure lamp?Coming ON? If the engine runing and the lamp is ON change oil pump.
Hi before you do an oil change try seafoam in the engine oil. this can sometimes fix the problems you are having, I used seafoam in engine oil and fuel and breather line and ran engine for 100 miles, but don't run hard, and its cleaned all the sump and oil veins in the engine, as checked with a scope looking though the oil sump plug. it did a really good job, my engine is a bit older than yours 1994. oil sensor is at the bottom of the engine on the sump. pressure sensor is above the oil filter it has a single wire conection
If i were you i would use the wiring harness from the engine that you have transplanted into your car, failling that there could be either a mechanical or electrical problem with the engine that you have transplanted, have come across problems like yourself in the past very frustrating and time consuming but you will get there in the end transplanting two different engines is never easy.
