You did not say what engine you have. I will assume it is the 3.5 liter 24-valve engine. This is most likely due to air in your cooling system. The only way to eliminate the air lock is to vent it out at the thermostat housing. If there is air in the system, the engine will overheat and also fail to send heat to the heater. When the engine is running at high RPMs the problem is mitigated, but it is trapped air that is probably the culprit.
