The ac system is not working properly. Some days it will cool perfectly and some days the compressor will kick on for about a minute and then kick off like there's a bad pressure switch or something don't really no how to troubleshoot that.But i do know that the system is neither over or under charged.
You have a bad evaporator temperature sensor in evaporator case very common
It's possible that the wire connected to the pressure switch is getting a bad connection use a zip tie to tighten the connection
I'd need to see the pressure when it's kicking off. If the pressure is on the edge, it can cause it to drop on cooler days where the low pressure switch shuts it down. How do you know what charge is in it? Did you evacuate and fill with a scale? You CANNOT judge charge based on pressure alone. Impossible

You could have a slow leak and the system is low on R134 and soon will stop running. The other thing to look for is the relay to the A/C compressor and switch it with an other relay or just replace it since there not that expensive. The pressure switch is an easy replacement to do, you just have to be quick so you don't lose all the R134 out of the system. Recap, recharge the system and get a proper reading on your high and low side A/C lines. To much R134 will also give you the same problem. Good luck and hope this helps.

By pass both pressure switches one at a time with small wire or a paper clip. If comperssor kicks on replace the swich that you bypassed.
if not it could be the fan clutch ot the compressor. Compressor runs about $400.00
