I have a 1989 Chevrolet Celebrity-2.8 multi-port engine. I have replaced the fuel pump, the fuel filter, put a new distributor cap on, replaced the spark plugs and new wires. Changed the air and oil...

Sounds like something getting warm/hot as engine warms up. Could be the MAP sensor, Coil/Coil pack, Ignition Switch(not the key cylinder), or possibly the Oxygen Sensor.

Next time it does this, pull a plug wire out of the coil pack and hold it close to the tower, and have someone crank the engine to see if your still getting a spark.
Could also be a loose connector on the throttle body injection, or a broken wire.

My '01 impala 3.4 v-6 flat spots when COLD, at around 20mph. the idle is ruff with random misfires. acceleration is overall poor. when HOT, most symptoms go away leaving only some slight acceleration...

depending on mileage, but possible tune-up could fix it. if already done then check ignition coil pack and ignition wires also spark plugs, check vacuum hoses for leaks or porous, last injectors clogged - use some techron fuel injector cleaner (wal-mart has them). Also get the throttle body and iac valve cleaned by throttle cleaner . Also this other possibilities are to be checked and confirmed.:---- Engine running rough or misfiring can be cause by the following:

1.Defective spark plugs
2.Inadequate spark/coil, defective spark plug wire.
3. Lack of compression
4.False air leakage.
5. Faulty fuel injectors.
6. Insufficient fuel pressure.
7. Contaminated fuel.
8. EGR valve that is leaking.
9. Oxygen sensors.
10. Throttle position sensor.
11. Manifold absolute pressure sensor
12.Mass Airflow Sensor
13.Idle air control valve

--------- This should help.Keep updated.Thanks.Helpmech.

Wont idle down

your IAC idle air control sensor is probably gunked up and if it is so is your throttle body...also check all vacuum line for integrity..i found a bad hose going to my MAP sensor..both of this caused problems.
Clean the IAC with throttle body cleaner not carb cleaner, and dont clean the map sensor its contolled by air vacuum, just replace the hose if found cracked, if its bad you have to replace it it cant be adjusted.

1991 Chevy Lumina 3.1 won't pass smog. Changed the wires and plugs (found 2 fouled plugs), repaired vacuum hose that came from the MAP sensor... Now I have no idea... report shows unburned fuel...any...

If your car runs well, then you're looking at Oxygen sensors that need changed. For your car, they should be changed between every 50 and 60,000 miles. This is the key sensor to the fuel mixture, and likely the problem with your plug fouling as well. Bad oxygen sensors will cause the car to run rich, but it will run ok. There are other sensors that can cause this, but they will make the engine run terribly, such as the MAP sensor. The Coolant Temperature sensor can also cause the same problems as the O2 sensors, but it is very reliable and more than likely not the issue.
